May 30 is designated by the United Nations as International Potato Day!
Potato facts:
- staple food for two-thirds of the world’s population
- produces low levels of greenhouse gas emissions compared to other crops
- is drought and cold resistant, and can be grown in barren conditions
- five-thousand varieties
- valuable food resource and income generator for rural farmers. The UN says “Small-scale and family farming production of the potato … supports efforts to reduce hunger, malnutrition and poverty, and achieve food security, and relies on and contributes greatly to the conservation and sustainable use of biodiversity.” Source
