25 Minute Berry Muesli Muffins

Ingredients

  • cups plain flour
  • 1 egg
  • ½ cup milk
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • ½-1½ cups toasted muesli or granola, optional but filling. The more muesli the denser the muffin, so matter of personal taste

Instructions

  • Preheat oven to 170℃/350℉.
  • Line a muffin tin with patty pans.
  • Whisk together milk, sugar, egg, vegetable oil and vanilla.
  • In a separate bowl, mix flour, baking powder and salt. Throw in museli or granola if using.
  • Combine wet and dry ingredients and use a spoon to mix, but don't over mix.
  • Use a spoon to divide the mixture into the patty pans.
  • Press in berries. A single serve will take 4 or 5 berries easily.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
