Preheat oven to 210℃/410℉. Place baking sheet paper on baking trays.
Brush egg along the edges of one side of the pastry sheet.
Lay salami at the bottom of one end of the sheet, ensuring it goes right to the edges.
Cover with a good amount of mixed cheese.
Roll sheet upwards, and if necessary, add more egg wash at the end to secure.
Slice the rolled puff pastry sheet into eight sections and place on prepared baking trays. You can brush with a little more egg wash and top with more parmesan.
Bake for about 25 minutes or until golden.
