Watermelon and Apple Salad with Pistachios

Ingredients

  • 6 thick slices watermelon (seeded or seeds removed), cut into ribbons, or diced
  • 3 green apples, cored and thinly sliced
  • handful of lettuce leaves of your choosing, cos, butter or baby spinach
  • 2 tbsp pistachio kernels lightly toasted and chopped

Dressing

  • 2 lemons, juiced
  • 2 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 cup each of fresh coriander and mint, then chopped
  • salt and pepper

Instructions

  • Arrange watermelon, apple and salad on a serving platter and drizzle generously with dressing. Sprinkle with nuts.
  • Alternatively, combine watermelon and apple in a bowl and mix through dressing very gently. Transfer to serving platter with lettuce. Sprinkle with nuts.
