I can’t think of the word “muffin” any more without thinking of that scene from Shrek when the Gingerbread Man asks Lord Farquaad if he knows the Muffin Man. The one from Drury Lane. Apparently, a few hundred years ago, the real Drury Lane muffin men used to go door to door selling their goods, including what we now think of as English muffins, which are more of a bread. These simple berry muffins are definitely in the cake department. Seriously, why buy something from the supermarket with a long list of (potentially unknown) ingredients when these can be on the table in minutes. If you don’t eat them all, they easily freeze.

25 Minute Berry Muesli Muffins
Ingredients
- 1½ cups plain flour
- 1 egg
- ½ cup milk
- ¾ cup sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp salt
- ½ cup vegetable oil
- ½-1½ cups toasted muesli or granola, optional but filling. The more muesli the denser the muffin, so matter of personal taste
- fresh berries
Instructions
- Preheat oven to 170℃/350℉.
- Line a muffin tin with patty pans.
- Whisk together milk, sugar, egg, vegetable oil and vanilla.
- In a separate bowl, mix flour, baking powder and salt. Throw in museli or granola if using.
- Combine wet and dry ingredients and use a spoon to mix, but don't over mix.
- Use a spoon to divide the mixture into the patty pans.
- Press in berries. A single serve will take 4 or 5 berries easily.
- Bake for 18-20 minutes or until a toothpick comes out clean.
