These are a huge step up from Bridget Jones’s dessert of marmalade, while hinting at the lemon pie you could make if only you *languid sigh* had the time. All while using only two ingredients. Simple, quick and adaptable? Yes, we can! Of course you could make your own pastry and curd, but then you could also buy them. This is what farmers markets and provedores are for. Also, supermarkets. No lemon? Try lime or passionfruit (hint: taste the curd before using and add a little sugar throughout if too tart for you). Top with icing sugar or some fruit and a dollop of whipped cream for effect. Depending on the baking tray you use, they can be more dessert-on-a-tray-size, or more finger food-with-a-glass-of-lambrusco-size.

Lazy Dessert – Puff Pastry Lemon Curd Tartlets
Ingredients
- 2 sheets puff pastry, frozen
- 12 tbsp lemon or other curd
Instructions
- Preheat oven to 210℃/410℉.
- Lightly grease a 12 cup muffin/cupcake non-stick baking tray.
- Thaw puff pastry sheets and cut into 12 rough squares.
- Push puff pastry lightly into each muffin cup, ensuring there's some overhang. It doesn't matter if they're not perfect, as long as they're a decent shape (wings even?) and enough to contain the curd.
- Place a tablespoon of curd into each pastry square (this would be a teaspoon if you're making tinier tartlets; it's really of case of judging by sight).
- Bake until golden.
- When cooled, sprinkle with icing sugar or top with fruit, or whipped cream.
