With that out of the way, let’s talk about watermelon and apple salad with pistachios!
Scientists tracing the DNA of what we know of as watermelon show we’ve been eating watermelon for eons as a dessert. There are paintings of watermelons found in Egyptian tombs.
Why not strike a blow for human evolution by upgrading it to be part of the savoury meal?
When I think of my perfect BBQ meal, I think smoky meats, potato salad, and then something as light and refreshing as this, as a balance. Sorry, but crunchy, and savoury, and sweet, and juicy, all the same time? Yes, please. Watermelon and apple salad with pistachios is literally one you can throw together at the absolute last minute. I love that a bit of fruit can give boring old lettuce a rebirth.
I’m deliberately ignoring the apple in this dish, though the apple can be traced back for eons, too. The apple had a moment in this post.

Watermelon and Apple Salad with Pistachios
Ingredients
- 6 thick slices watermelon (seeded or seeds removed), cut into ribbons, or diced
- 3 green apples, cored and thinly sliced
- handful of lettuce leaves of your choosing, cos, butter or baby spinach
- 2 tbsp pistachio kernels lightly toasted and chopped
Dressing
- 2 lemons, juiced
- 2 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 cup each of fresh coriander and mint, then chopped
- salt and pepper
Instructions
- Arrange watermelon, apple and salad on a serving platter and drizzle generously with dressing. Sprinkle with nuts.
- Alternatively, combine watermelon and apple in a bowl and mix through dressing very gently. Transfer to serving platter with lettuce. Sprinkle with nuts.
